I just wasted my valuable time, but I wanted you to know what's really going on in this kitchen, a lot of you say you love. I was so surprised at what I saw in this kitchen, they have 5 gallons of rotten food in the floor of the Walkin, they call compost for their backyard, WHAT? I gagged when I saw it, I'm a professional Chef, I came here looking for a job. within the first 15 minutes I was horrified at what this guy that calls himself a chef says to me, I picked up a molded rotten tomato and threw it in the "compost" bucket, He immediately grabbed it out and said he saves the molded rotten tomatoes for his red sauce, I was in shock! Thats not all, he uses wilted rotten romain for his ceaser salad wraps, I called him out on it it and asked how I would do it, I said first I would use fresh romain give it a good ice bath to make it crunchy and delicious ,and serve it like that, he looked at me for about 3 seconds and said I don't think you are going to work out here, pack up your stuff. So, I did. Btw, the kitchen is filthy, the air intake is nasty with gunk as you walk in, that's the first thing you see. The paper towels not cloth towels are washed and reused and have stains that look like poop are used to wipe down the tables, knives, cutting boards, etc. I had to let you know. I can't stand by and watch this!
